1 tbsp olive oil
¼ cup onion (peeled and diced)
¼ cup red or green bell pepper (diced)
1 tbsp nutritional yeast
½ tsp mild chili powder
¼ tsp turmeric
â…› tsp smoked paprika
¼ tsp salt
1½ cups chickpeas (lightly mashed, some left whole)
1 tomato (chopped)
â…“ cup vegetable broth
Over moderate heat, in a skillet, heat the oil.
Add the onion and bell pepper to the skillet and sauté until fork tender, for approximately 3-5 minutes.
Stir in the nutritional yeast, chili powder, turmeric, smoked paprika, and salt.
Sauté for an additional 60 seconds until the spices emit their fragrance.
Add the chickpeas, followed by the chopped tomato and vegetable broth.
Bring to a simmer and cook until the chickpeas are creamy for around 3-5 minutes.
