1 cup pickled cucumber
1 teaspoon coconut oil
1 teaspoon peanut butter
1 chopped red onion
1 teaspoon miso paste
1 sliced carrot
1 teaspoon soy sauce
1 tablespoon gochujang
1 teaspoon maple syrup
1 pinch salt
1 handful halved green beans
1 handful shredded cilantro leaves
1 cup shredded cauliflower (into florets)
5 ounces ramen noodles
2 ounces cubed tofu
1 sliced scallion
Pour the oil into a pan. Add the carrots, salt, and onion.
Sauté for 60 seconds.
Add in the syrup, gochujang, sauce, butter, and miso paste.
Add 4 cups of water.
Boil for 4 minutes.
Add in the green beans and cauliflower.
Cook for 4 minutes.
Add in the tofu. Cook for 3 minutes.
Add the noodles. Cook till the noodles are ready.
Serve and top with the pickled cucumber.
Garnish with cilantro and scallion
