3½ ounces plain flour
1 tsp baking powder
Salt and freshly ground black pepper
1 medium egg
â…— cup whole milk
1 (7 ounces) can sweetcorn kernels (drained and patted dry)
Oil (to fry, as needed)
Salsa, store-bought (to serve, optional)
Into a bowl, sift in the flour, baking powder, and a little seasoning.
Make a well in the middle of the dry mixture.
Crack an egg into the well. A little at a time, beat in the milk to create a smooth batter.
Add the drained sweetcorn to the batter, and mix well to combine.
Add 1 tbsp of oil to a frying pan. When hot, in spoonful amounts, and working in batches, add the batter mixture to the pan.
Cook for approximately 2 minutes on each side, until crisp and golden on both sides.
It is important not to overcrowd the pan.
Aim to make 8-10 fritters.
As they cook, remove the fritters from the pan, and set on a plate lined with a kitchen paper towel.
Doing this will help to absorb any excess oil.
Serve the fritters with salsa and enjoy.
