1 head cauliflower (chopped to florets)
1 tablespoon coconut oil
1 teaspoon grated ginger
1 handful chopped leeks
1 chopped Granny apple (with skin)
3 teaspoons curry powder
1 pinch salt
2 cups vegetable broth
1 tablespoon lemon juice
7 ounces coconut milk
Pour the oil into a saucepan.
Add the ginger, leeks, apple, and cauliflower. Cook for 3 minutes.
Throw in the salt and curry. Stir in.
Add the broth and coconut milk.
Boil for 15 minutes.
Transfer into the blender. Add the lemon juice.
Blend till creamily smooth.
Serve and garnish with roasted almond seeds.
