2 cups spinach leaves
1 pinch salt
1 pinch pepper
1 cup gnocchi
7 ounces diced roasted tomatoes
2 minced garlic cloves
1 sliced yellow onion
1 pinch red pepper flakes
1 tablespoon olive oil
7 ounces chickpeas (rinsed)
1 handful chopped basil leaves
2 cups vegetable broth
2 handfuls green beans
Pour the oil into a pot. Sauté the onion and garlic for 3 minutes.
Add the red pepper, chickpeas, broth, salt, tomatoes, and pepper.
Allow simmering for 10 minutes.
Add the gnocchi.
Cook till tender.
Add the spinach. Cook for 1 minute.
Serve and garnish with basil.
