100g red lentils
1 cubed small-sized sweet potato
1 tablespoon olive oil
1 liter vegetable stock
2 small-sized carrots (cubed)
1 chopped bell pepper
1 cubed parsnip
1 grated garlic clove
1 pinch dried chili flakes
1 tablespoon salt
1 tablespoon grated ginger
1 tablespoon pepper
1 diced onion
Sauté the onions in a pan of oil.
Add the potato, peppers, parsnips, and carrots.
Cook for 2 minutes.
Throw in the ginger and garlic. Stir-fry for 2 minutes.
Add salt, stock, and lentils.
Cook for 10 minutes.
Process the mixture and serve with bread.
