3½ ounces spaghetti
1 tbsp extra-virgin olive oil
1 small onion (peeled and finely chopped)
10 cherry tomatoes (halved)
1 (3½ ounces) can boneless sardines in oil (drained)
8 green olives (pitted and halved)
2 tsp capers
A handful of parsley (chopped)
Cook the spaghetti according to the package directions and until al dente.
Drain well and set a little of the pasta cooking liquid to one side.
In the meantime, heat the oil in a frying pan.
Add the onion to the pan and cook until softened, for 4-5 minutes.
Add the garlic to the onions along with the tomatoes, and cook for an additional 2-3 minutes.
Fold in the sardines, using the back of a wooden spoon to break them up lightly.
Add the green olive halves and capers. Season to taste and heat through.
Toss in the pasta along with a splash of the pasta cooking water.
Garnish with parsley and serve.
