2 cups white rice (long grain)
2 cans coconut milk
2 tablespoons lemon juice
2 tablespoons salt
1 teaspoon cayenne pepper
12 ounces halved snow peas
20oz pressed tofu (cubed)
6 tablespoons vegetable oil
1 teaspoon ground pepper
8 tablespoons tamari
8 heads quartered bok choy
8 tablespoons chopped roasted cashew
5 sliced scallions
1 sliced chili
Put the salt, lemon juice, 1 teaspoon of water, and milk in a pan.
Boil for 4 minutes before adding the rice.
Reduce the heat and cook the rice till tender and dried.
Put the pressed tofu in a pan of oil.
Add cayenne, pepper, and salt.
Cook till the tofu is golden. Transfer to a reserved plate.
Pour the remaining oil into the pan. Throw in the scallion, bok choy, tamari,
and snow peas.
Cook for 4 minutes.
Add the tofu, salt, and lemon juice.
Serve with rice.
Garnish with chili and cashew.
