1 tablespoon hoisin sauce
2 quartered eggplants
1 handful basil leaves
1 tablespoon garlic (minced)
1 sliced yellow onion
1 pinch minced ginger
1 sliced jalapeno pepper
3 tablespoons peanut oil
1 teaspoon plum sauce
1 tablespoons soy sauce
Combine the sauces in a bowl. Mix well.
Pour 2 tablespoon of oil into a pan. Add in the eggplants.
Stir-fry till brown and soft.
Transfer to a medium-sized bowl. Keep aside.
Pour the remaining oil into the pan. Add in the spices, onion, and jalapeno.
Cook for 6 minutes.
Transfer this mixture into the bowl of eggplant.
Add in the basil and sauces.
