2 sliced red baby potatoes
1 sliced small beet
1 sliced small sweet potato
2 quartered radishes
1 pinch salt
1 tablespoon coconut oil
1 handful chopped broccolini
1 teaspoon curry powder
1 handful sliced cabbage
1 cup chopped kale
1 sliced small red pepper
Preheat the oven to 402 degrees F.
Line a sheet with parchment.
Arrange the solid ingredients on the sheet.
Garnish with oil, salt, and curry.
Toss well. Bake for 15 minutes.
Serve and garnish with lemon juice, hemp seeds, and basil.
