1 pinch oregano
1 tablespoon oil
1 tablespoon cumin
1 diced medium-sized onion
2 tablespoons chili powder
2 minced garlic cloves
1 tablespoon chili flakes
1 can whole tomatoes with juice
1 diced bell pepper
1 diced celery stalk
1 diced large carrot
1 can rinsed beans (drained)
1 teaspoon salt
1 cup corn
Pour the oil into a pot. Add the garlic and onion. Sauté for 2 minutes.
Toss in the chili flakes, cumin, chili powder, and oregano.
Throw in the carrots, peppers, and celery. Cook for 4 minutes.
Add in the tomatoes and juice.
Allow simmering for 15 minutes.
Add the corn and beans.
Cook for 4 minutes more.
Season with salt
