often made with fried potatoes & ham, with eggs tossed in.
The recipe uses sausages instead of the ham.
Makes 3 Servings
Cooking + Prep Time: 25 minutes
2 cups of oil, cooking
3 peeled, fry-cut potatoes, medium
3 & 1/2 oz. of cubed sausages
3 beaten eggs, large
Salt, kosher, as desired
Pepper, black, as desired
For garnishing: sliced chilies, torn cilantro
Heat oil in large fry pan.
Fry potatoes till crisp and golden. Remove and set them aside.
Pour off pan oil except for 1 tsp. Heat oil and fry sausage cubes till browned nicely.
Add beaten eggs. Stir while cooking till they have set. Season as desired.
Add fried potatoes to mixture. Toss till heated fully through.
Garnish with sliced chilies and/or torn cilantro. Serve.
