2 (14 ounces) cans cherry tomatoes
1 (14 ounces) can mixed bean salad (drained)
7 ounces baby spinach
4 eggs
1¾ ounces smoked ham (thinly sliced and torn)
Rye bread (to serve, optional)

Cooking Instructions:

Add the canned cherry tomatoes and mixed bean salad to an ovenproof casserole dish.
Simmer for 10 minutes until reduced.

Fold in the baby spinach and cook until wilted, for 5 minutes.
Heat your broiler to moderate heat.
Using the back of a spoon, make four well-shapes in the mixture.
Crack one egg into each well.
Place the torn ham in the mixture and broil for 4-5 minutes, until the whites set and the yolks remain runny.
Serve with rye bread to mop up the juices.
